How to make it

  • Peel and cut the eggplant into French fry strips
  • Soak the eggplant in salted water for 1 hour or even a little more
  • Drain WELL
  • Toss in the corn meal that has been seasoned with a little cayenne and paprika
  • Fry in Crisco on medium high heat until golden brown and crisp
  • Drain on paper towels
  • Serve immediately
  • My mother sometimes cut a small eggplant in *rounds* , soaked it in salted water, and tossed it cornmeal before frying

    Oh yum - now to convince my husband that it is other than eggplant...and I can picture a yogurt and garlic sauce to dip in...or even a marinara
