This is something my little brother came up with! Easy and versatile. Can add onions, spinach, mushrooms, whatever you like, but, we love it just like this!

Ingredients
  • Penne Pasta
  • 2 lbs chopped tomatoes (any type)
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 3 garlic cloves (chopped fine)
  • 1/4 tsp red pepper flakes
  • 1/4 c dried parlsey
  • 1/4 tsp dried oregano
  • 8 oz low fat mozzarella
  • 1 can chicken broth

Directions
  1. Add 1 can chicken broth tand pasta to stove top pot
  2. Add water and kosher salt
  3. Cook pasta following instructions on box.
  4. White pasta cooks, saute garlic, red pepper and oregano in olive oil.
  5. Add tomatoes, sauteeing lightly for 2-3 minutes.
  6. In a bowl, combine tomatoes, pasta, parsley, and cheese.
  7. Drizzle with vinegar.
  8. Serve hot or cold.
