Fudge Cookies

- 3/4 cups of semi-sweet chocolate chips shopping list
- 1/2 stick of butter at room temperature shopping list
- 1 egg shopping list
- 1 tsp. vanilla extract shopping list
- 1/3 cup of white sugar shopping list
- 1/2 cup of almond flour shopping list
- 1/2 tsp. baking powder shopping list
- 2 TB unsweetened cocoa powder shopping list
- a pinch salt shopping list
- 1/3 cup walnuts, chopped or pieces shopping list
- 1/2 cup semi-sweet chocolate chips shopping list
- 1/2 cup raisins (I use golden raisins.) shopping list
- You can buy almond flour which is just powdered almonds at any high quality market or health food store. It adds a chewiness to any cookie, brownie or cake recipe. (I use Bob's Red Mill almond flour.) *You can also substitute 1/2 cup of regular flour if you don't want a gluten-free cookie. shopping list
- *You can substitute dried cranberries for the raisins and change the walnuts to pecans. shopping list
How to make it
- Melt butter and 1/2 c. chips in microwave for 1 1/2 minute.
- Stir well until smooth.
- In medium bowl whisk egg, extract, and sugar until well-combined.
- Stir in the melted chocolate mixture.
- In a separate bowl combine the almond flour, baking powder and salt.
- Mix in with chocolate mixture until barely mixed. .
- Mix in the remaining 1/2 c. chips, nuts, and raisins.
- Cover and chill for one hour.
- Place by tablespoonfuls on greased cookie sheets, then press down each cookie lightly with the back of a spoon.
- Bake at 325 degrees for 13-15 minutes.
- Remove from oven when slightly puffy.
- The cookies will firm up while they cool.
