  • 3/4 cups of semi-sweet chocolate chips
  • 1/2 stick of butter at room temperature
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/3 cup of white sugar
  • 1/2 cup of almond flour
  • 1/2 tsp. baking powder
  • 2 TB unsweetened cocoa powder
  • a pinch salt
  • 1/3 cup walnuts, chopped or pieces
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup raisins (I use golden raisins.)
  • You can buy almond flour which is just powdered almonds at any high quality market or health food store. It adds a chewiness to any cookie, brownie or cake recipe. (I use Bob's Red Mill Almond Flour.) *You can also substitute 1/2 cup of regular flour if you don't want a gluten-free cookie.
  • *You can substitute dried cranberries for the raisins and change the walnuts to pecans.

Directions
  1. Melt butter and 1/2 c. chips in microwave for 1 1/2 minute.
  2. Stir well until smooth.
  3. In medium bowl whisk egg, extract, and sugar until well-combined.
  4. Stir in the melted chocolate mixture.
  5. In a separate bowl combine the almond flour, baking powder and salt.
  6. Mix in with chocolate mixture until barely mixed. .
  7. Mix in the remaining 1/2 c. chips, nuts, and raisins.
  8. Cover and chill for one hour.
  9. Place by tablespoonfuls on greased cookie sheets, then press down each cookie lightly with the back of a spoon.
  10. Bake at 325 degrees for 13-15 minutes.
  11. Remove from oven when slightly puffy.
  12. The cookies will firm up while they cool.
