Old Fashioned Banana Bread Recipe
A simple banana nut bread that turns out perfectly every time. My family eats it with (and occasionally for) breakfast/brunch, but it would work well as a snack. I guessed at the servings, but it fills a standard loaf pan.

Ingredients
  • 1 stick butter, softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 c. whole wheat flour
  • 1 c. unbleached, all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 3 large, overripe bananas, mashed
  • 1/2 c. walnuts

Directions
  1. Preheat oven to 350F, grease a 9x5x3 loaf pan.
  2. Cream butter and sugar together until fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In another bowl sift the flours, salt, and baking soda together.
  5. Add the dry ingredients to the wet, mixing well.
  6. Gently fold in the vanilla, bananas, and walnuts.
  7. Pour in loaf pan, even out with the back of a spoon, and bake for 60 minutes or until a toothpick comes out clean from the center.
