Ingredients

1 1/2 pounds boness, skinless chicken breasts

salt and pepper, to taste

1 cup flour

2 tablespoons extra virgin olive oil

4 cloves garlic, peeled and smashed

1 tablespoon butter

8 ounces mushrooms, fresh shiitake, oyster and cremini, cut into 1/4" slices

2/3 cup chicken broth, canned

2 teaspoons fresh thyme, chopped

2 tablespoons heavy cream

2 tablespoons balsamic vinegar

1/4 teaspoon tabasco sauce

Directions

Cut chicken into 1 1/2" pieces and season with salt & pepper. Dredge in flour and shake to remove any excess flour. Set aside.

In large skillet over medium heat, heat oil & garlic until garlic begins to sizzle. Add butter & melt.

Add chicken and brown lightly on one side (without turning) about 2 minutes. Turn and repeat. Add mushrooms, sprinkle with salt & pepper and cook, stirring, until they start to soften and brown in places about 3 minutes. Add broth and thyme, bring to boil then reduce heat to medium-low. Cover and simmer gently until firm to the touch and cooked through and the mushrooms are tender, about 4 minutes.

Stir in cream, vinegar and Tabasco and heat for 1 minute. Season with salt and pepper and a spinkle of thyme. Serve with noodles.
