Chicken With Wild Mushrooms Garlic And Thyme

- 1 1/2 pounds boness, skinless chicken breasts shopping list
- salt and pepper, to taste shopping list
- 1 cup flour shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 4 cloves garlic, peeled and smashed shopping list
- 1 tablespoon butter shopping list
- 8 ounces mushrooms, fresh shiitake, oyster and cremini, cut into 1/4" slices shopping list
- 2/3 cup chicken broth, canned shopping list
- 2 teaspoons fresh thyme, chopped shopping list
- 2 tablespoons heavy cream shopping list
- 2 tablespoons balsamic vinegar shopping list
- 1/4 teaspoon Tabasco sauce shopping list
How to make it
- Cut chicken into 1 1/2" pieces and season with salt & pepper. Dredge in flour and shake to remove any excess flour. Set aside.
- In large skillet over medium heat, heat oil & garlic until garlic begins to sizzle. Add butter & melt.
- Add chicken and brown lightly on one side (without turning) about 2 minutes. Turn and repeat. Add mushrooms, sprinkle with salt & pepper and cook, stirring, until they start to soften and brown in places about 3 minutes. Add broth and thyme, bring to boil then reduce heat to medium-low. Cover and simmer gently until firm to the touch and cooked through and the mushrooms are tender, about 4 minutes.
- Stir in cream, vinegar and Tabasco and heat for 1 minute. Season with salt and pepper and a spinkle of thyme. Serve with noodles.

This turned out really good. I couldn't get the Oyster mushrooms so just button mushrooms.
