curry chicken pita W cucumber yohgurt sauce

- 1 cooked rotisery chicken shopping list
- pita pockets (whole wheat have more flavor) shopping list
- 2 1/2 cups yohgurt shopping list
- 2 table spoons curry powder shopping list
- 1/2 teaspoon spice chili powder shopping list
- 1/2 teaspoon onion powder shopping list
- 1/4 teaspoon yellow mustard crushed shopping list
- 1/4 teaspoon pink pepper corn shopping list
- 1/4 teaspoon grated fresh ginger shopping list
- 1/4 teaspoon grama masala shopping list
- 1/4 teaspoon smoked salt shopping list
- 1/4 teaspoon cumin shopping list
- 1/2 tablespoon soy sauce shopping list
- juice of lemon and zest shopping list
- 3 tablespoons home made mayo ( recipe below) shopping list
- 1 cucumber with no maxey skin grated shopping list
How to make it
- take your 2 1/2 cups yohgurt and place in a collinder lined with cheese cloth or a paper towel and let drain in your fridge for 1 hour to let all the tangy clear liquid comes out it become thick and rich more sweet and alot like greek style
- now shread all your chicken and mix with all that spices curry,chili,onion,mustard,salt,pepper,grama masala,cumin, lemon zest,
- mayo:
- 1/4 cup vinager any kind i love redwine
- 1/2 cup oliver oil
- salt
- pepper
- favorite mustard a small teaspoon
- place all in blender except oil turn on and slowly add vinager until thick and rich
- mix three tablespoons of mayo with lemon juice and mix with half of your yoghut that has drained and then mix that with your spiced chickenand half of your grated cucumber and let stand in fridge. for up too two hours
- for cucumber sauce take the rest of your cucumber and mix with a tablespoon of mayo and some lemon juice lots of salt and pink pepper mix in the rest of your drained yohgurt, let that stand until your ready to eat, pile up your chicken in a pita with lots of sauce and extra cucumber
- put on your favorite moraccan music and dance the nigh away with this tasty little treat!!

This is a fantastic recipe which I could easily convert to vegetarian by using baked tofu or seitan
