Warm Potato and Tuna Salad

- 8 small new potatoes scrubbed shopping list
- 3 spring onions trimmed and finely chopped shopping list
- 1 tablespoon chopped fresh parsley shopping list
- 1 teaspoon lemon juice shopping list
- 2 teaspoon tarragon or cider vinegar shopping list
- 1 teaspoon olive oil shopping list
- 1 can tuna chunks in oil drained shopping list
- 1 teaspoon sea salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- lemon wedges to garnish. shopping list
How to make it
- Cook potatoes in lightly salted water for 15 minutes.
- Mix together onions, most of the parsley, lemon juice, vinegar and olive oil.
- Drain potatoes and place in a serving bowl then add dressing and toss well.
- Gently mix in the tuna being careful to avoid breaking it up too much.
- Season with salt and pepper then sprinkle with remaining parsley.
- Garnish with lemon wedges and serve while warm.
