How to make it

  • Combine chicken, vinegar, garlic bay leaves, pepper and water in a large kettle, bring to a boil, and simmer covered for 20 minutes.
  • Add soy sauce and simmer for another 20 minutes.
  • Transfer chicken to a plate and cover, reserving liquid.
  • Boil liquid for 10 minutes, or until reduced to one cup.
  • Meanwhile, sauté chicken in oil in separate frying pan for five minutes, or until browned.
  • After reserved liquid has boiled down, skim fat and remove bay leaves. Transfer chicken to a serving plate and add sauce over it.

    It is GOOD! I use rice vinegar as it is a sweeter taste than distilled white which is very harsh. I serve it over the wide noodles from the asian store rather than rice. But rice is nice.

    You're right, they are similar but not the same :) I'm curious to see how they compare in flavor. I noticed you're just around the corner from me. I'm in Sterling. Maybe I'll come over for dinner *wink*
    I've never tried coconut vinegar... sounds really good.

    Of course, best served over fresh cooked long grain rice. I always enjoy this dish, it's so simple, but so good. I also love how it smells in the house when it is cooking.
