Ingredients
  • 4 lbs dark meat chicken (drumsticks and thighs, separated)
  • 1 1/2 c distilled white vinegar
  • 3 garlic cloves, crushed
  • 2 bay leaves
  • 1/2 tbsp crushed black pepper
  • 1 c water
  • 3/4 c soy sauce
  • 3 tbsp vegetable oil

Directions
  1. Combine chicken, vinegar, garlic bay leaves, pepper and water in a large kettle, bring to a boil, and simmer covered for 20 minutes.
  2. Add soy sauce and simmer for another 20 minutes.
  3. Transfer chicken to a plate and cover, reserving liquid.
  4. Boil liquid for 10 minutes, or until reduced to one cup.
  5. Meanwhile, sauté chicken in oil in separate frying pan for five minutes, or until browned.
  6. After reserved liquid has boiled down, skim fat and remove bay leaves. Transfer chicken to a serving plate and add sauce over it.

Of course, best served over fresh cooked long grain rice. I always enjoy this dish, it's so simple, but so good. I also love how it smells in the house when it is cooking.


I made this tonight for dinner and we loved it. And mattjb is right it makes the house smell so good. I used rice vinegar instead of white vinegar. Thanks for a great post.


You're right, they are similar but not the same :) I'm curious to see how they compare in flavor. I noticed you're just around the corner from me. I'm in Sterling. Maybe I'll come over for dinner *wink*
I've never tried coconut vinegar... sounds really good.


It is GOOD! I use rice vinegar as it is a sweeter taste than distilled white which is very harsh. I serve it over the wide noodles from the asian store rather than rice. But rice is nice.
