Blueberry-Poppyseed Brunch Cake

- 1/2c butter,softened shopping list
- 2/3c sugar shopping list
- 1 egg shopping list
- 2tsp grated lemon peel shopping list
- 11/2c all-purpose flour shopping list
- 2Tbs poppy seeds shopping list
- 1/tsp baking powder shopping list
- 1/4tsp baking soda shopping list
- 1/4tsp salt shopping list
- 1/2c sour cream shopping list
- Topping: shopping list
- 1/3c sugar shopping list
- 2tsp all-purpose flour shopping list
- 1/4tsp ground nutmeg shopping list
- 2c fresh or frozen unsweetened blueberries shopping list
- Glaze: shopping list
- 1/2c confectioners' sugar shopping list
- 1Tbs milk shopping list
How to make it
- In a small mixing bowl,cream butter and sugar until light and fluffy Add egg;beat well. Stir in lemon peel Combine flour,poppy seeds,baking powder,baking sodaand salt;add to the creamed mixture alternately with sourcream. beat till just combined. Spread in to a 9" springform pan.
- For topping,in a small bowl,combine the sugar,flour and nutmeg;gently stir in blueberries until coated. Sprinkle over batter.
- Bake at 350 for 50-55 mins or till toothpick comes out clean. Cool for 10 mins on wire rack;remove sides of the pan.
- Meanwhile,in a small bowl,whisk confectioners sugar and milk until smooth;drizzle over cake. Refrigerate leftovers.
- Note: If using frozen blueberries,do not thaw before adding to batter.
- For an alternate glaze,can substitute 1 tsp. each of lemon
- juice and milk for the 1Tbs. milk and add a little fresh lemon
- peel.
