When I made this for my family last night we decided we had to make it for my brother's groom's dinner in a few weeks. Yum.

Ingredients
  • 1/2 cup all purpose flour
  • 1/3 cup rolled oats
  • 1/4 cup plus 3 Tbsp brown sugar, divided
  • 1 1/4 tsp cinnamon, divided
  • 3/4 tsp nutmeg, divided
  • 1/2 tsp allspice, divided
  • 1/4 tsp salt
  • 4 tsp vegan margarine (I used regular), divided
  • 1/2 cup raw pecans, chopped
  • 2 Tbsp unsweetened shredded coconut
  • 3 mangoes, peeled, pitted, and cut into 1 inch cubes (2 1/2 cups)
  • 1/2 pineapple, peeled, cored and cut into 1 inch cubes (2 1/2 cups)

Directions
  1. preheat oven to 375 degrees
  2. coat 8 inch baking dish with non-stick spray
  3. combine flour, oats, 1/4 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp allspice and salt in medium bowl
  4. add 4 tbsp margarine and rub with fingertips until mixture forms coarse meal.
  5. stir in coconut and nuts
  6. combine remaining brown sugar, cinnamon, nutmeg, and allspice in a large bowl with mangoes and pineapple.
  7. transfer to baking dish
  8. sprinkle topping over fruit mixture
  9. bake for 40 minutes or until topping is golden brown and juices bubble
  10. serve with ice cream, of course!
