How to make it

  • spray or oil muffin tin
  • beat together egg and milk
  • in bowl mix ritz crackers with taco seasoning
  • pound chicken breasts to about 1/4 inch thick and place one slice of cheese and one slice of bacon (crumbled) in middle of chicken breast
  • fold in outside edges of chicken breasts, forming a ball
  • dip chicken ball in egg wash and than roll in ritz and taco seasoning mix
  • flace formed breast open side down in muffin tin
  • sprinkle with remaining crumbs and spray with olive oil
  • bake in oven at 375 degrees for 40 minutes
  • during last 10 minutes of baking spray chicken balls again with oil

    This is a versatile stuffing that you could use to stuff a whole chicken a breast of veal or a pork tenderloin and it would be fantastic. I have used this type or recipe to stuff peppers and squid also.
