Cheesy Stuffed Chicken Breast Recipe

Ingredients
  • 4-6 chicken breasts
  • 1 pkg taco seasoning
  • 1/2 pkg (1/2 a roll) crushed ritz crackers
  • 1/2 pkg bacon
  • 4-6 slices cheese
  • 1 egg
  • olive oil or spray
  • 1/2 cup milk

Directions
  1. spray or oil muffin tin
  2. beat together egg and milk
  3. in bowl mix ritz crackers with taco seasoning
  4. pound chicken breasts to about 1/4 inch thick and place one slice of cheese and one slice of bacon (crumbled) in middle of chicken breast
  5. fold in outside edges of chicken breasts, forming a ball
  6. dip chicken ball in egg wash and than roll in ritz and taco seasoning mix
  7. flace formed breast open side down in muffin tin
  8. sprinkle with remaining crumbs and spray with olive oil
  9. bake in oven at 375 degrees for 40 minutes
  10. during last 10 minutes of baking spray chicken balls again with oil

This is a versatile stuffing that you could use to stuff a whole chicken a breast of veal or a pork tenderloin and it would be fantastic. I have used this type or recipe to stuff peppers and squid also.
