Onions Neptune Recipe
My friends ask for this casserole when I'm to bring something to a buffet.

Ingredients
  • 5 to 6 medium sweet onions, sliced and separated into rings
  • 1/2 cup butter, softened, divided
  • 2 6-oz. cans llump crabmeat, drained, divided
  • 3 cups shredded Swiss cheese
  • 1 can mushroom soup
  • 1/2 cup evaporated milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 12 to 16 slices French bread cut 1/4" thick

Directions
  1. In a large skillet, saute onions in 1/4 cup butter until tender. Remove from the heat; gently stir in half of the crab. Spread into a greased 13 x 9" baking dish. Top with remaining crab. Combine the cheese, soup, milk, salt and pepper; spoon over crab.
  2. Spread remaining butter over one side of each slice of bread; place buttered side up over casserole. Bake, uncovered, at 350 F for 35 to 45 minutes or until golden brown.

Auntybea!! are you sure its not Auntybear?, awwww onions Neptune!!!! this is chefs day off food, nice and easy, rich and creamy, crunchy and satisfying, gonna try this one fairly soon.
ooh ooh!! how about make it garlic butter on top, then we can have garlic and crab breath at the same time!, or maybe basil butter.

Oh boy my favorite food(crab) favorite cheese and butter this is yummy I have never tried adding swiss to any fish always assumed it would be over powering... this is one of those things i am going to make without anyone around cause I dont want to share!!! Thanks for this! Bookmarked!!!

Alterations


Darling Auntybea, may I be so bold as to suggest changeing the evap milk for heavy/double cream, after all, that butters gonna kill ya anyway, yuk yuk.


Haahahahaha! Too true Bear, my friend. But you need all the fat you can to hibernate in a few short months, whereas the rest of us still have to fit into our bikinis for our winter cruises! LOL
