Grilled Eggplant With Basil Oil

- 3 tbs evoo shopping list
- 2 cloves garlic, pressed shopping list
- 2 tsp fresh mined thyme or oregano leaves shopping list
- salt and ground black pepper shopping list
- 1 lg eggplant (about 1.5 lbs), ends trimmed and cut cross-wise into 3/4 inch thick rounds shopping list
- basil OIL: shopping list
- 1/4 c EVOO shopping list
- 1 clove garlic, pressed shopping list
- 1/2 c packed fresh basil leaves shopping list
- salt and ground black pepper shopping list
How to make it
- Combine oil, garlic, thyme, salt and pepper to taste in a small bowl.
- Brush eggplant slices on both sides with oil mixture.
- Grill over medium hot fire, turning once until both sides are marked with dark stripes about 8-10 minutes.
- Transfer to platter.
- Basil OIL:
- Place oil and garlic in skillet and turn heat to medium.
- Cook until garlic JUST starts to sizzle and become fragrant, about 2 minutes.
- Place basil in food processor.
- Carefully pour hot oil over basil.
- Process until smooth, about 30 seconds.
- Add salt and pepper.
- Drizzle over eggplant and serve immediately

I like the added element of basil oil for the grilled eggplants. This definitely takes it up a notch flavor wise. I'm going to make this for my party as a side!
