How to make it

  • Combine oil, garlic, thyme, salt and pepper to taste in a small bowl.
  • Brush eggplant slices on both sides with oil mixture.
  • Grill over medium hot fire, turning once until both sides are marked with dark stripes about 8-10 minutes.
  • Transfer to platter.
  • Basil OIL:
  • Place oil and garlic in skillet and turn heat to medium.
  • Cook until garlic JUST starts to sizzle and become fragrant, about 2 minutes.
  • Place basil in food processor.
  • Carefully pour hot oil over basil.
  • Process until smooth, about 30 seconds.
  • Add salt and pepper.
  • Drizzle over eggplant and serve immediately

    I like the added element of basil oil for the grilled eggplants. This definitely takes it up a notch flavor wise. I'm going to make this for my party as a side!
