Homemade Marshmallows

- 3 envelopes unflavored gelatin ( .75 oz Knox Gelatin) shopping list
- 1/2 cup cold water shopping list
- 2 cups granulated sugar shopping list
- 2/3 cup light corn syrup shopping list
- 1/4 cup water shopping list
- 1/4 teaspoon salt shopping list
- 1 Tablespoon good vanilla shopping list
How to make it
- Line 8 x 11 pan with plastic wrap, spray with Pam, set aside
- In the bowl of your electric mixture pour in 1/2 cup cold water and sprinkle the gelatin on top. Soak for about 10 minutes.
- While gelatin & water are soaking, combine the sugar, corn syrup and 1/4 cup water in a small saucepan.
- Bring to a quick boil stirring all the time, full boil for one minute.
- Pour the boiling syrup into soaked gelatin mixture. Turn mixer on low for a couple seconds then on highest speed.
- Add salt and mix on high for 12 minutes.
- Add vanilla and continue beating on high one more minute
- Spray a spatula with Pam and pour/scrape marshmallow mixture into the prepared pan and spread evenly.
- Spray another piece of plastic wrap with Pam and place, sprayed side down, on op of the marshmallow mixture.
- Let sit a few hours or overnight.
- Remove mixture from pan and cut into size you like, with a butcher knife.
- Optional: Dredge each marshmallow piece in powdered sugar.
- Store airtight.
- These can be frozen. They get a little smaller after being frozen and will easily defrost in about a minute.
