This makes an 8 x 10 pan of marshmallows so the servings depend on how you cut it. These are sweet, delicious, fat free and guaranteed to be the best marshmallow you ever had. Simple recipe.

Ingredients
  • 3 envelopes unflavored gelatin ( .75 oz Knox Gelatin)
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 2/3 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 Tablespoon good vanilla

Directions
  1. Line 8 x 11 pan with plastic wrap, spray with Pam, set aside
  2. In the bowl of your electric mixture pour in 1/2 cup cold water and sprinkle the gelatin on top. Soak for about 10 minutes.
  3. While gelatin & water are soaking, combine the sugar, corn syrup and 1/4 cup water in a small saucepan.
  4. Bring to a quick boil stirring all the time, full boil for one minute.
  5. Pour the boiling syrup into soaked gelatin mixture. Turn mixer on low for a couple seconds then on highest speed.
  6. Add salt and mix on high for 12 minutes.
  7. Add vanilla and continue beating on high one more minute
  8. Spray a spatula with Pam and pour/scrape marshmallow mixture into the prepared pan and spread evenly.
  9. Spray another piece of plastic wrap with Pam and place, sprayed side down, on op of the marshmallow mixture.
  10. Let sit a few hours or overnight.
  11. Remove mixture from pan and cut into size you like, with a butcher knife.
  12. Optional: Dredge each marshmallow piece in powdered sugar.
  13. Store airtight.
  14. These can be frozen. They get a little smaller after being frozen and will easily defrost in about a minute.

The best part is they are so easy to make and if you freeze 'em there's always some on hand!!
