How to make it

  • Line 8 x 11 pan with plastic wrap, spray with Pam, set aside
  • In the bowl of your electric mixture pour in 1/2 cup cold water and sprinkle the gelatin on top. Soak for about 10 minutes.
  • While gelatin & water are soaking, combine the sugar, corn syrup and 1/4 cup water in a small saucepan.
  • Bring to a quick boil stirring all the time, full boil for one minute.
  • Pour the boiling syrup into soaked gelatin mixture. Turn mixer on low for a couple seconds then on highest speed.
  • Add salt and mix on high for 12 minutes.
  • Add vanilla and continue beating on high one more minute
  • Spray a spatula with Pam and pour/scrape marshmallow mixture into the prepared pan and spread evenly.
  • Spray another piece of plastic wrap with Pam and place, sprayed side down, on op of the marshmallow mixture.
  • Let sit a few hours or overnight.
  • Remove mixture from pan and cut into size you like, with a butcher knife.
  • Optional: Dredge each marshmallow piece in powdered sugar.
  • Store airtight.
  • These can be frozen. They get a little smaller after being frozen and will easily defrost in about a minute.
