Enhanced Pancake Mixes

another experiment that proved to be successful! Takes store-bought pancake mixes to another level with flavors of your choice!

2-3 tablespoons of your favorite instant pudding flavor shopping list
any pancake mix in portion you want shopping list
1/4 cup granulated sugar shopping list
1 tsp. vanilla extract (other extract flavors are also great: maple, almond, cocoanut, lemon, etc.) shopping list

Put pancake mix in bowl
Add sugar, dry pudding mix & blend. Don't overdo the pudding mix, as it will make your pancakes so light that they will fall apart when trying to flip them over. Of course, who am I to tell you how you like them...?
Add extract & liquid ingredients as directed on box (i.e., water, eggs, oil, etc)
Stir accoring to directions on box and cook on griddle as usual.
