Brazilian Cheese Puffs

- 500g tapioca flour shopping list
- 300 mL skim milk, divided shopping list
- ½ cup canola oil shopping list
- 200g grated parmesan cheese shopping list
- 2 eggs shopping list
How to make it
- Preheat oven to 450F.
- Put the flour in a stand mixer with paddle attachment or a very deep bowl with a hand mixer at the ready.
- Boil 250 mL milk with the oil.
- Drizzle the milk mixture slowly into the flour while beating at low speed until all the flour is moistened.
- Add the eggs and beat well on medium speed.
- Mix in the remaining milk.
- By hand, stir in the cheese, making sure it is well distributed.
- With wet hands, form into small balls and place on sheets 1" apart.
- Place into the oven and immediately reduce the temperature to 400F.
- Bake for 25 minutes.
- Serve warm!
