Elegant Quiche

- 10" spring form pan (good quality) shopping list
- 1 tsp dry mustard shopping list
- 1 crust to overlap the pan shopping list
- 4-5 cups shredded sharp cheddar (easier to shred if place in freezer for 30 minutes) or any cheese you like shopping list
- 6 eggs shopping list
- 1 qt +1/2 pint heavy cream shopping list
- 1-2 cups shredded raw spinach (mainly for color shopping list
- sea salt and fresh ground pepper shopping list
How to make it
- Preheat the oven to 450 degrees
- Place the rolled dough into the spring form pan and let dough hang over the sides
- Sprinkle with the dry mustard
- Place 1/2 of the cheese in the pan
- Layer the Spinach on top of the cheese
- Sprinkle with salt and pepper
- Add remaining cheese
- Whisk the eggs and cream together and pour slowly into the pan
- Make sure all of the ingredients are covered with the liquid
- Take a rolling pin or jar and roll around the top edge of the pan to remove the excess crust
- Place in the oven on a sheet pan and turn the oven down to 325 degrees
- Bake until the center is somewhat jiggly (it will continue to settle as it cools down) about 60-70 minutes
- After allowing to cool slightly (15 - 20 Minutes) remove the sides of the pan
- Use a very sharp knife to cut into wedges.
- If you feel the quiche is browning too quickly cover with aluminum foil
