Ingredients
  • 10" spring form pan
  • 1 pie crust to overlap the side of the pan
  • 1 tsp dry mustard
  • 4-5 c sharp shredded cheddar cheese
  • 1 qt +1/2 pt heavy cream
  • 6 lg eggs
  • 1 - 2 cups shredded raw spinach (mainly for color) or any vegetable or meat you like. Be creative
  • Sea salt and fresh ground pepper

Directions
  1. Preheat the oven to 450 degrees
  2. Place the dough inside the pan and let it overhang the sides; gently massage the crust into the pan to make it even
  3. Sprinkle the mustard into the bottom of crust
  4. Add 1/2 of the cheese even in the bottom of the crust
  5. Add the spinach in a layer
  6. Generously sprinkle with the salt and pepper
  7. Add remaining cheese
  8. Whisk the cream and eggs together and slowly pour into the pan
  9. Run a rolling pin or jar around the top edge of the pan to remove excess dough
  10. Place the pan on a cookie sheet and place into the oven
  11. TURN OVEN DOWN TO 325 degrees
  12. Bake 60-70 minutes or until center still has a little jiggle to it. It will settle as it cools
  13. Cool for 15-20 minutes before removing the pan sides.
