How to make it

  • Preheat the oven to 450 degrees
  • Place the dough inside the pan and let it overhang the sides; gently massage the crust into the pan to make it even
  • Sprinkle the mustard into the bottom of crust
  • Add 1/2 of the cheese even in the bottom of the crust
  • Add the spinach in a layer
  • Generously sprinkle with the salt and pepper
  • Add remaining cheese
  • Whisk the cream and eggs together and slowly pour into the pan
  • Run a rolling pin or jar around the top edge of the pan to remove excess dough
  • Place the pan on a cookie sheet and place into the oven
  • TURN OVEN DOWN TO 325 degrees
  • Bake 60-70 minutes or until center still has a little jiggle to it. It will settle as it cools
  • Cool for 15-20 minutes before removing the pan sides.
