Stuffed Avocado With Lobster Recipe

Ingredients

1 small Lobster baked in oven and meat removed

Several ripe avocados

chopped cilantro

cooked kernel corn

chopped red onion

chopped red tomato

Sauce:

1/2 cup honey

1 Tbs hot mustard

2 tsp fresh lemon juice

2 tsp olive oil

Directions

Decoratively slice the avocado in half and remove the avocado from the shell, leaving shell intact.

Dice the lobster meat and set aside.

Dice the avocado and vegetables and set aside.

Make sauce by whisking all ingredients and then place in a plastic squeeze bottle.

Sprinkle over some of the diced cilantro and vegetables. Squeeze the sauce decoratively around the plate.

Presentation: Mix the avocado and lobster meat and spoon into shell

That sounds so good, midgelet - I will probably try it with crab, since that's easiest to get my hands on around here. The dressing sounds very tasty with the avocado and other ingredients...this will make a great meal on a hot summer day!
