How to make it

  • Preheat the oven to 350F
  • Sift flour, baking soda and ground ginger together in a large mixing bowl.
  • Cut butter into small pieces and cut into dry mixture (using pastry blender) until you have the consistency of fine breadcrumbs.
  • Add the sugar and mix.
  • Mix the beaten egg and golden syrup (or honey or molasses)together.
  • Add to the dry mixture, blending together to form a dough.
  • Roll out on a floured surface to 1/4 inch thick,.
  • Cut out shapes with cookie cutters.
  • Place on a lightly greased or lined baking sheet,
  • Decorate and cook for approximately 10 to 15 minutes (depending upon size of cookie).
  • Check the color and spread as they bake to see when your cookies are ready.
  • After they are done, leave on baking sheet for a few minutes then transfer to a cooling rack and leave to cool completely.
  • Finish decorating with frosting.
