Spiced Peach Preserves

- 5 c peaches, chopped shopping list
- 1/4 c lemon juice shopping list
- 9 c sugar shopping list
- 1/2 tsp ground cinnamon shopping list
- 1/8 tsp ground cloves shopping list
- 1/8 tsp ground ginger shopping list
- 1 box Sure-Jell shopping list
How to make it
- Put peaches, lemon juice, sugar, and spices into heavy 6-qt. kettle. Stir over high het to a full, rolling boil. Boil hard for one minute, stirring constantly. Remove from heat. At once stir in pectin. Skim off foam with metal spoon, then stir and skim for 5 minutes to cool slightly and prevent floating fruit. Ladle into jars. Seal at once with lids. Makes 10 half-pints of 5 pints. Prep times and cooking times will vary. I like to skin my peaches prior to chopping them. This takes extra time.
