How to make it

  • Slice the leeks thinly, and prepare the apple.
  • Slice the scallops in half along the 'equator' and set on paper towels to dry.
  • Melt 1 T. butter in a non-stick frying pan and gently saute the leeks and apples until soft. Set aside.
  • Add more butter if necessary and arrange the scallops in a single layer in the frying pan. Saute over medium-high heat until some have started to brown. Adjust the heat as necessary to evaporate any juices.
  • Turn them over and add the apple-leek mixture.
  • When the scallops are cooked, add the cream and saute until the cream has evaporated. This happens fast.
