Scallops With Apples Recipe
I tasted something like this in Paris. It is so quick to prepare.

Ingredients
  • 1 lb. scallops, no sulfites--if the scallops are not uniform in color, they don't have sulfites.
  • 1 apple, skin on, sliced and cut up a bit
  • 2 leeks, white parts and about an inch of green
  • 1-2 T. butter
  • 2 T. cream

Directions
  1. Slice the leeks thinly, and prepare the apple.
  2. Slice the scallops in half along the 'equator' and set on paper towels to dry.
  3. Melt 1 T. butter in a non-stick frying pan and gently saute the leeks and apples until soft. Set aside.
  4. Add more butter if necessary and arrange the scallops in a single layer in the frying pan. Saute over medium-high heat until some have started to brown. Adjust the heat as necessary to evaporate any juices.
  5. Turn them over and add the apple-leek mixture.
  6. When the scallops are cooked, add the cream and saute until the cream has evaporated. This happens fast.
