Scallops with apples

- 1 lb. scallops, no sulfites--if the scallops are not uniform in color, they don't have sulfites. shopping list
- 1 apple, skin on, sliced and cut up a bit shopping list
- 2 leeks, white parts and about an inch of green shopping list
- 1-2 T. butter shopping list
- 2 T. cream shopping list
How to make it
- Slice the leeks thinly, and prepare the apple.
- Slice the scallops in half along the 'equator' and set on paper towels to dry.
- Melt 1 T. butter in a non-stick frying pan and gently saute the leeks and apples until soft. Set aside.
- Add more butter if necessary and arrange the scallops in a single layer in the frying pan. Saute over medium-high heat until some have started to brown. Adjust the heat as necessary to evaporate any juices.
- Turn them over and add the apple-leek mixture.
- When the scallops are cooked, add the cream and saute until the cream has evaporated. This happens fast.
