Summer Tuna Salad Recipe
This is a very quick and easy tuna salad that could be used for brunch or for a luncheon.

Ingredients
  • 2 cans chunk light tuna, drained
  • 3 dill pickles
  • 1 bread & butter (or sweet) pickle
  • 6 green large green olives
  • 2 pickled hot peppers
  • 3 pickled garlic cloves
  • 8 mini-English muffins or 4 regular, split in half
  • 1/2 cup low-fat mayonnaise

Directions
  1. In your food processor, process the pickles, olives, garlic and peppers together.
  2. Add tuna and pulse a for few seconds.
  3. Add mayonnaise, pulse
  4. Toast English muffin halves.
  5. Scoop tuna salad onto muffins and serve.
  6. NOTE: You could add sliced cheese to the top and broil for 2 - 3 minutes before serving.

Okay, I figured it out....
