Ingredients

How to make it

  • Heat oil in skillet on Medium High heat.
  • Mix salmon and rice together until thoroughly blended then add eggs.
  • Add onion and pepper and mix well.
  • Add spices.
  • I use my hands and fingers to make sure everything is evenly distributed.
  • When oil is hot form into patties in the palm of your hand.
  • I made mine about 3 inches in diameter and not very thick (about the thickness of a hamburger patty)
  • Place in hot oil and fry about 7 minutes on each side or until golden brown.
  • When served fresh they are very crispy on the outside and moist on the inside.
  • Awesome with Pinto Beans and Creamed Potatoes and skillet corn bread.
  • Would also be great with a black bean and corn salsa.
  • Serves 4 as main course or 12 as appetizers, depending on size of cake.

    I love how you always apologize for using lard in your recipes by saying you're not going to apologize!! L0L I don't care about the lard, I just LOVE your recipes, dear! I've searched all the salmon pattie recipes on here and this one is the best! P.S. You can't quit your lard; I can't quit my bacon fat! :)

    Sounds very hot, almost Cuban. My abuelita used milder spices, esp. saffron. My daughter would love this because it MUST have a kick!! D. Manuel

    I've never liked cooked salmon :) I don't know why??
