Deviled Salmon Cakes Recipe


DEVILED SALMON CAKES Recipe
I had some leftover rice last night and haven’t fried anything in awhile and decided to combine the two and came up with this! Interestingly enough, this tastes very much like deviled crab!

Ingredients
  • 1 14 oz. can Pink Salmon, drained, skin and bones removed
  • 2 Large Eggs
  • ½ cup diced Sweet Onion
  • ½ cup diced Yellow Bell Pepper (or any other color)
  • 1 tsp minced Garlic
  • ½ tsp ground Cumin
  • ¼ to ½ tsp Sea Salt
  • 1/8 to ¼ tsp ground Cayenne Pepper
  • 2 cups cooked Jasmine Rice (or any sticky rice, leftover rice that will bind well)
  • Vegetable oil, or Lard for frying - ¼ inch in frying pan or enough to cover half of your patty …I use lard…no apologies…

Directions
  1. Heat oil in skillet on Medium High heat.
  2. Mix salmon and rice together until thoroughly blended then add eggs.
  3. Add onion and pepper and mix well.
  4. Add spices.
  5. I use my hands and fingers to make sure everything is evenly distributed.
  6. When oil is hot form into patties in the palm of your hand.
  7. I made mine about 3 inches in diameter and not very thick (about the thickness of a hamburger patty)
  8. Place in hot oil and fry about 7 minutes on each side or until golden brown.
  9. When served fresh they are very crispy on the outside and moist on the inside.
  10. Awesome with Pinto Beans and Creamed Potatoes and skillet corn bread.
  11. Would also be great with a black bean and corn salsa.
  12. Serves 4 as main course or 12 as appetizers, depending on size of cake.

I've eaten salmon and rice before but I never thought of adding it to the patty. Hmmmm - tasty!!

reinvented in an elegant fashion the spice blend is so modern and flavorful simply wonderful

No apologies needed but usually I only use lard when I make soap. I figure I’ve done enough stuff that should have killed me. Great recipe!


Sounds very hot, almost Cuban. My abuelita used milder spices, esp. saffron. My daughter would love this because it MUST have a kick!! D. Manuel
