DEVILED SALMON CAKES

- 1 14 oz. can pink salmon, drained, skin and bones removed shopping list
- 2 Large eggs shopping list
- ½ cup diced sweet onion shopping list
- ½ cup diced yellow bell pepper (or any other color) shopping list
- 1 tsp minced garlic shopping list
- ½ tsp ground cumin shopping list
- ¼ to ½ tsp sea salt shopping list
- 1/8 to ¼ tsp ground cayenne pepper shopping list
- 2 cups cooked jasmine rice (or any sticky rice, leftover rice that will bind well) shopping list
- vegetable oil, or lard for frying - ¼ inch in frying pan or enough to cover half of your patty …I use lard…no apologies… shopping list
How to make it
- Heat oil in skillet on Medium High heat.
- Mix salmon and rice together until thoroughly blended then add eggs.
- Add onion and pepper and mix well.
- Add spices.
- I use my hands and fingers to make sure everything is evenly distributed.
- When oil is hot form into patties in the palm of your hand.
- I made mine about 3 inches in diameter and not very thick (about the thickness of a hamburger patty)
- Place in hot oil and fry about 7 minutes on each side or until golden brown.
- When served fresh they are very crispy on the outside and moist on the inside.
- Awesome with Pinto Beans and Creamed Potatoes and skillet corn bread.
- Would also be great with a black bean and corn salsa.
- Serves 4 as main course or 12 as appetizers, depending on size of cake.

No apologies needed but usually I only use lard when I make soap. I figure I’ve done enough stuff that should have killed me. Great recipe!
