This is great with roasted or baked chicken or pork, and can also be used as a dipping sauce for shrimp...........light the grill......this is yummy................. courtesy of the tortuga rum and caribbean party cookbook

Ingredients
  • 2 - tablespoons butter
  • 1 - tablespoon fresh grated ginger
  • 2 - medium onions , minced
  • 2- cups orange juice
  • 12 - ounce jar of orange marmalade
  • 1/2 - cup + 1 tablespoon tortuga gold rum ( or light rum)
  • 1 - teaspoon Jamaican all purpose seasoning ( look in my recipes for this one )
  • 1 - tablespoon tortuga hell-fire- hot pepper sauce ( or any hot -hot pepper sauce)

Directions
  1. In a 2 quart saucepan , melt butter over medium high heat and add onions and ginger, sautening until onions are translucent.
  2. combine marmalade, orange juice, all purpose seasoning , pepper sauce and add 1/2 cup of the rum, and add to the onions, stirring well.
  3. bring to a boil again, reduce heat to a medium-low and simmer, stirring occasionally, until sauce is reduced by half and thickened.
  4. about 30 minutes.
  5. remove from heat and stir in remaining 1 tablespoon rum...
  6. allow to cool 15 minutes, before serving .
  7. brush generously on chicken or what ever you are using before roasting .
  8. if using as a dip serve it warm............... enjoy ............
