Tortuga Spiced -Orange -Ginger Rum Sauce

- 2 - tablespoons butter shopping list
- 1 - tablespoon fresh grated ginger shopping list
- 2 - medium onions , minced shopping list
- 2- cups orange juice shopping list
- 12 - ounce jar of orange marmalade shopping list
- 1/2 - cup + 1 tablespoon tortuga gold rum ( or light rum) shopping list
- 1 - teaspoon Jamaican all purpose seasoning ( look in my recipes for this one ) shopping list
- 1 - tablespoon tortuga hell-fire- hot pepper sauce ( or any hot -hot pepper sauce) shopping list
How to make it
- In a 2 quart saucepan , melt butter over medium high heat and add onions and ginger, sautening until onions are translucent.
- combine marmalade, orange juice, all purpose seasoning , pepper sauce and add 1/2 cup of the rum, and add to the onions, stirring well.
- bring to a boil again, reduce heat to a medium-low and simmer, stirring occasionally, until sauce is reduced by half and thickened.
- about 30 minutes.
- remove from heat and stir in remaining 1 tablespoon rum...
- allow to cool 15 minutes, before serving .
- brush generously on chicken or what ever you are using before roasting .
- if using as a dip serve it warm............... enjoy ............
