When we go onbus tours to interior Mexico, we stop a place called "Chino". They served us this and it was instant love.

Yeah...this stuff is AWESOME. We always used a small cast iron skillet and didn't spoon off the fat. That way, we could do it on the stove top and the chorizo fat would prevent the cheese from sticking to the pan. I like the Asadero...but it's really good with a mixture of Asadero and Cotija cheeses. Try it. (They sell it at H-E-B)
