Ingredients

How to make it

  • Cut the leeks (or onions) and peppers into manageable sized chunks. I like to cut them at a slant into pieces about 1" long.
  • Cut each tomato in half (I cut grape/pear tomatoes lengthwise to keep them longish like the onions)
  • Toss all the veggies with EVOO first to coat (this protects them from the vinegar which breaks them down)
  • Sprinkle with salt and pepper and toss
  • Add a couple splashes of balsamic vinegar and toss
  • Add the feta and toss

    Dressed vegetables are soooo much better than leaves. Except arugula. And mache. But anyhow. Check out my Super-Slaw recipe, a cousin of this one.

    Sounds like a greek salad that I make called Choriatiki Salata. It doesn't have lettuce either!
