Spinach And Feta Damper - Australian Bread - No Bread Maker Needed Recipe

This is an Australian "bread" with a Greek twist- a la my roots... It is delicious with a thick soup, or a roast, but is also great warm accompanying dips or spreads. You could also substitute pumpkin for the spinach if you are a pumpkin fan like me!

Ingredients
  • 900g flour
  • 85g soft butter
  • 10g salt
  • 50g baking powder
  • 170 ml low fat milk
  • 330 ml water
  • 300g feta cheese
  • 100g grated cheddar cheese
  • 200g chopped spinach (fresh is best, but frozen will do!)
  • Chili flakes to taste!!

Directions
  1. Preheat oven to 200 degrees C
  2. Rub butter into dry ingredients
  3. Add milk and water - mix to a soft dough by hand
  4. Add feta, cheddar cheese and spinach - fold in
  5. Mix 'til all ingredients are well combined
  6. Lightly dust with flour
  7. Bake for 40-45 mins
  8. Can be re-heated or frozen

I tried this whilst camping and made it on top of the fire in the camping oven. it worked really well and gave it that extra aussie flavour. thanks fore the recipe!
