Ingredients
  • 8 oz. uncooked rigatoni or rotini
  • 1 Tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup chopped fresh mushrooms, or canned
  • 1/2 T chopped garlic
  • 1 (16 oz.) pkg. frozen chopped spinach, thawed
  • 2-3 cups cubed cooked chicken breasts
  • 1 (14.5 oz) can Italian style diced tomatoes
  • 1 (8 oz) container chive and onion cream cheese
  • ½ tsp. salt
  • ½ tsp pepper
  • 1 T Italian Seasoning
  • 1/2 c parmesan cheese
  • 2 cups shredded mozzarella cheese

Directions
  1. Directions
  2. Prepare pasta according to directions.
  3. Spread oil on bottom of 11 x 7 (or same volume) baking dish.
  4. Add onion, garlic and fresh mushrooms in a single layer.
  5. Bake 375 degrees for 15 min.
  6. Transfer onion mixture to a large bowl and set aside.
  7. Drain chopped spinach well, pressing between layers of paper towels.
  8. Stir pasta, spinach, chicken, tomatoes, cream cheese, italian seasoning and salt/pepper into onion in bowl.
  9. Spoon mixture into baking dish and sprinkle with parmesan and shredded mozzarella.
  10. Bake, covered at 375 degrees for 30 min. uncover and bake 15 more min. or until bubbly.
