Baked Artichokes And Tomatoes Recipe
A simple baked side dish. Great served with fish.

Ingredients
  • 1 stick butter, melted
  • 1lb(about) artichoke hearts
  • 2pts cherry tomatoes
  • 1 cup seasoned bread crumbs or stuffing mix, crushed
  • 1/2 cup freshly grated Parmesan cheese
  • salt and pepper

Directions
  1. In 9X13 baking dish, place artichokes and tomatoes.
  2. Pour about 1/2 the butter over them and sprinkle with salt and pepper.
  3. Combine rest of butter, bread crumbs, cheese, and a bit more salt and pepper in bowl.
  4. Sprinkle bread crumb topping over vegetables.
  5. Bake at 350 for about 30 minutes, until heated through and topping is crunchy.
