This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thiese Estate in McKinney, Texas in 1991.

Ingredients
- 1 tablespoon butter
- 12 eggs beaten
- 3 tomatoes seeded and chopped
- 6 ounces crumbled feta cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- 1 teaspoon freshly ground black pepper
Directions
- Heat olive oil in a large skillet over moderate heat and pour in the eggs.
- When eggs are partially set stir in remaining ingredients.
- Continue cooking stirring constantly until set to your preference.
