How to make it

  • Add olive oil to a saute pan and add celery, pepper and onion and saute for 5 minutes. add garlic and saute another 1 minute. Add 1/2 of the cajun seasoning and stir several times. Deglaze with 2 TBS beef stock for 30 seconds. Combine this with the beef, eggs, oatmeal and mix together using hands in a large bowl. I put mine in a glad bag for 24 hrs. Then put in a meatloaf pan and put the strips of bacon over the top, bake uncovered at 350 for 45 minutes then remove and add bbq sauce over the top and bake for another 45 minutes

    Wow love this meatloaf {I make mine this way except I dont use bbq sauce I use Itailan canned tomatoes Just an Idea{Your recipe is good thanks

    I think it got lowballed because most people use a combo of pork and beef. This particular way, with nothing but beef even if it's 10% fat will still be incredibly moist. I also use Emeril's cajun blend mixed myself or Prudhommes meat magic. All the others are way too salty for me.
