Ingredients

How to make it

  • In stand mixer, beat butter and sugar until fluffy.
  • Add lemon juice and zest and beat well.
  • Slowly add flour until combined.
  • Chill for about 2 hours.
  • Shape into 1 inch balls and roll in crushed pecans, if desired.
  • Place on baking sheet or stone about 1 inch apart.
  • Press indentation with thumb in center of each ball, and fill with tsp of preserves.
  • Bake at 350 for about 15 minutes until lightly browned.

    Hey Keni, found this in my recipe manager the other day. These were totally delicious! My husband called them "nice little pastries". Kids loved them too. This made a lot of cookies, so neighbors enjoyed their share too. I added my picture. Thanks for this great recipe!

    Hi Keni, these look great and I think a raspberry filling would be good, but would a lemon curd (filling) be good, or would it be too much lemon flavor going on?
