An easy lemony fruit filled cookie. Makes a great tea time cookie.

Ingredients
  • 2 cups butter, softened(no substitutions recommended)
  • 1 1/2 cups powdered sugar
  • juice from 1 large lemon
  • 1t lemon zest
  • 4 cups flour
  • assorted "all fruit" preserves(ie blueberry, orange, raspberry, etc)
  • finely crushed pecans(optional)

Directions
  1. In stand mixer, beat butter and sugar until fluffy.
  2. Add lemon juice and zest and beat well.
  3. Slowly add flour until combined.
  4. Chill for about 2 hours.
  5. Shape into 1 inch balls and roll in crushed pecans, if desired.
  6. Place on baking sheet or stone about 1 inch apart.
  7. Press indentation with thumb in center of each ball, and fill with tsp of preserves.
  8. Bake at 350 for about 15 minutes until lightly browned.

Hi Keni, these look great and I think a raspberry filling would be good, but would a lemon curd (filling) be good, or would it be too much lemon flavor going on?
