How to make it

  • Preheat oven to 350 degrees. Grease or line 16 muffin cups.
  • In a large bowl, mix flour, 1 cup sugar, cocoa, baking powder, baking soda and salt. Cut in the butter with a pastry blender.
  • Measure the beaten eggs, then add enough milk to make 11/2 cups total liquid. Stir milk and eggs into flour mixture. Then add chips and cherries, stirring only until all ingredients are combined.
  • Fill muffin cups almost full. Sprinkle remaining sugar on top of muffins. Bake 20-30 minutes or until a toothpick inserted in the middle comes out clean. If using greased muffin tins, allow muffins to cool almost completely before removing.
