Zucchini Bars with Almond Cream Cheese Frosting

- BARS: shopping list
- 2 cups sugar shopping list
- 1 cup oil shopping list
- 3 eggs shopping list
- 2 cups flour shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon vanilla shopping list
- 2 cups shredded zucchini shopping list
- 1 small carrot, shredded shopping list
- 3/4 cup rolled oats (or nuts) shopping list
- FROSTING: shopping list
- 1/2 cup softened butter or butter flavored shortening (to help hold up to the heat) shopping list
- 1/4 teaspoon almond extract (a little goes a long way!) shopping list
- 2 teaspoons vanilla shopping list
- 2 1/2 cups powdered sugar shopping list
- 1 package (3 oz.) softened cream cheese shopping list
- (you can thin the frosting down with some cream or milk) shopping list
How to make it
- Mix together oil and sugar, eggs and vanilla, mixing well.
- Add dry ingredients and fold in zucchini, carrot and nuts. (note, if you sift the flour, you will get a much lighter, higher cakelike bar)
- Pour into a greased and floured 9 x 13 pan. Bake at 350° for 30-35 minutes.
- Blend frosting ingredients and beat till smooth. Frost bars when cool, and cut into desired sizes. Makes approx 20 servings.
