Crustless Quiche Recipe

Ingredients
  • 1 tablespoon butter
  • 1 medium onion or leek
  • 1 potato or kumera, grated
  • 1 carrot, grated
  • 2 zucchini, grated
  • 2 tablespoons plain flour
  • 1/2 cup chopped fresh parsley
  • 4 eggs, lightly beaten
  • 300g sour cream
  • 1/2 cup shredded parmesan
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg or allspice

Directions
  1. Preheat oven to 180 degrees C
  2. Melt butter in a small frying pan, add onion, stir over medium heat for 2 minutes until onion is soft
  3. In a large bowl combine the grated vegetables and parsley with the flour and cheese
  4. Add the cooked onion, sour cream and eggs and mix well
  5. Pour the mixture into a greased pie dish and bake in a pre-heated oven for 45 minutes

Thanks! It is yummy. It is also easy to substitute ingredients and use whatever you have in the garden or fridge. I love leeks too and am eagerly awaiting for the ones in the garden!
