Crustless Quiche

- 1 tablespoon butter shopping list
- 1 medium onion or leek shopping list
- 1 potato or kumera, grated shopping list
- 1 carrot, grated shopping list
- 2 zucchini, grated shopping list
- 2 tablespoons plain flour shopping list
- 1/2 cup chopped fresh parsley shopping list
- 4 eggs, lightly beaten shopping list
- 300g sour cream shopping list
- 1/2 cup shredded parmesan shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon nutmeg or allspice shopping list
How to make it
- Preheat oven to 180 degrees C
- Melt butter in a small frying pan, add onion, stir over medium heat for 2 minutes until onion is soft
- In a large bowl combine the grated vegetables and parsley with the flour and cheese
- Add the cooked onion, sour cream and eggs and mix well
- Pour the mixture into a greased pie dish and bake in a pre-heated oven for 45 minutes
