Red Bean Dumplin Soup

- 2 cups cooked red beans(I use left overs from making red beans and rice) shopping list
- 1 large onion, chopped shopping list
- 1 cup chopped celery shopping list
- 4 to 6 slices of bacon shopping list
- 1 cup sliced smoked sausage shopping list
- 1/2 cup diced baked ham shopping list
- 2 to 2 1/2 cups chicken broth shopping list
- 1 cup sliced green onions shopping list
- 1 tablespoon Tony's Creole spice shopping list
- 3 tablespoons butter shopping list
- 1/2 cup milk shopping list
- Dumplings shopping list
- 2 cups flour shopping list
- 1 tablespoon baking powder shopping list
- dash salt shopping list
- 1 teaspoon dried parsley flakes shopping list
- 2 tablespoons cold butter shopping list
- 1 cup milk or water shopping list
- 1/2 teaspoon garlic powder shopping list
How to make it
- Dumplings:
- In medium bowl, combine flour,parsley flakes, garlic powder and salt.
- Cut in butter, using a pasty blender of fork.
- Slowly add milk, mixing with flour(do not over mix)
- Roll out dough on floured surface. Roll dough to 1/8 inch thickness.
- Cut dough into 2 inch strips
- In large soup pot, cook onions, celery, and green onions in butter until tender.
- Add bacon sausage and ham and continue to cook 3 to 4 minutes.
- Add broth and beans and bring to a boil.
- Reduce heat to low simmer and cook for 3 to 5 minutes.
- Drop dumplings a few at a time into simmering broth.
- Stir to prevent sticking
- Add Tony's and continue to simmer for 10 to 12 minutes.
- Serve with fresh hot French bread slices on the side
