This is a great twist on plain old peanut brittle.

Ingredients
  • 1 stick butter, if salted, omit salt
  • 1 cup brown sugar, packed firmly
  • 1/4 cup light corn syrup
  • 1 3/4 tsp. cayenne
  • 1/2 tsp. salt
  • 2 1/2 cups peanuts, dry roasted
  • 2 1/2 cups cashews, dry roasted
  • 1/2 cup sunflower seeds, roasted
  • 3 tbls. sesame seeds

Directions
  1. Put foil on baking sheet
  2. Spray foil with cooking spray
  3. Put butter, brown sugar, corn syrup, cayenne, and salt in large pan and over medium heat stir until melted and smooth, about 5 minutes
  4. Add nuts and seeds
  5. Turn heat to high and stir until mixture is very thick and nuts begin to brown, 4 to 6 minutes
  6. Pour mixture onto, spreading as thinly as possible with a spatula Cool about 15 minutes
  7. Release brittle from foil, then break it into bite-size pieces
  8. Store in an airtight container (sugar absorbs moisture and will become sticky)
