Lemonade Cookies

These cookies are a great summer treat. They are a bit tangy and a bit tart, but oh sooo good.
Ingredients
- cookie Ingredients: shopping list
- 1 1/4 cups sugar shopping list
- 1 1/4 cups butter, softened shopping list
- 2 eggs shopping list
- 3 cups all-purpose flour shopping list
- 1 (6-ounce) can frozen lemonade or orange juice concentrate, thawed, reserve 2 tablespoons for frosting shopping list
- 1 teaspoon baking soda shopping list
- frosting Ingredients: shopping list
- 3 cups powdered sugar shopping list
- 1/3 cup butter, softened shopping list
- 2 tablespoons reserved frozen lemonade concentrate shopping list
- 1 teaspoon vanilla shopping list
- 1 to 2 tablespoons milk shopping list
- Yellow decorator sugar, if desired shopping list
How to make it
- Heat oven to 400°F. Combine 1 1/4 cups sugar, butter and eggs in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low. Beat, gradually adding flour, lemonade concentrate and baking soda and scraping bowl often, until well mixed.
- Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 8 to 14 minutes or until edges are lightly browned. Cool completely.
- Combine all frosting ingredients except milk and decorator sugar in small bowl. Beat at low speed, scraping bowl often and adding enough milk for desired spreading consistency. Frost cooled cookies; sprinkle with decorator sugar. .
