Beet Leaf Holubtsi Rolls Recipe
These Ukrainian rolls freeze well and are a good vegetarian standby. I use short grain rice for a stickier rice and freeze beet leaves for winter.

Ingredients
  • 2 cups water
  • 1 cup rice
  • 1/2 tsp salt
  • 1/4 cup chopped onions
  • 1/2 cup butter
  • 1/8 cup chopped dill (optional)
  • Salt & pepper
  • 1/2 cup cream
  • Beet leaves

Directions
  1. Bring water, rice and salt to a boil, cover and cook until soft. Fry onions in butter until onions are translucent. Drain rice and add to onions along with dill, salt and pepper. Pick young fresh beet leaves, pour boiling water over leaves and drain.
  2. Place 1 tsp rice mixture on each leaf (more rice mixture depending on size of leaf) fold sides over filling and roll tighly. Place in layers in greased baking dish or casserole. Pour cream over Holubtsi; cover and bake at 300 F for 3/4 hour or until heated thru.
