How to make it

  • In a medium saucepan, bring 2/3 cups water to a boil.
  • Add rice and stir once or twice.
  • Reduce heat and simmer, covered for 20 minutes. Keep warm.
  • In a small bowl, mix the rice vinegar, sugar ,and salt until dissolved.
  • Transfer rice to a bowl, and using a (preferably wooden) spoon, blend the mixture into the rice.
  • Place a sheet of nori on a bamboo rolling mat.
  • Using wet hands, spread half the rice in a thin layer, leaving about 1" space on the sheet facing you.
  • Arrange half the cucumber and surimi along the edge of the nori, on top of the rice.
  • Lift the end of the mat, and gently roll it over the ingredients, pressing gently.
  • Roll it forward to make a complete roll. Transfer to a cutting board, and repeat with remaining ingredients.
  • Wet a sharp knife (the sharpest you have!) and slice each roll into 6 pieces.
  • Serve with wasabi, shoyu and gari if desired.
