Ingredients

1, 29 ounce can of pinto beans, rinsed, drained

1 bundle of fresh cilantro (use at least 1/2 cup of leaves)

2 small red onions, halved and sliced into thin strips

8 Roma tomatoes, quartered and chopped coarsley

3 TB apple cider vinegar or red wine vinegar

2 tsp fresh lemon juice

2 TB olive oil

1 tsp. granulated garlic or fresh chopped garlic

salt and pepper

Directions

Add all of the ingredients and let sit for at least 30 minutes.

Season with salt and pepper and serve!

***If you'd like to serve this in an avocado, peel and halve your avocado (remove the seed) and lightly sprinkle the inside with some lemon or lime juice to keep it from browning. Then sprinkle just a bit of salt directly on to the fruit. Spoon your salad into the cavity of the avocado and serve.
