Red Onions With Pinto Beans Salad

- 1, 29 ounce can of pinto beans, rinsed, drained shopping list
- 1 bundle of fresh cilantro (use at least 1/2 cup of leaves) shopping list
- 2 small red onions, halved and sliced into thin strips shopping list
- 8 roma tomatoes, quartered and chopped coarsley shopping list
- 3 TB apple cider vinegar or red wine vinegar shopping list
- 2 tsp fresh lemon juice shopping list
- 2 TB olive oil shopping list
- 1 tsp. granulated garlic or fresh chopped garlic shopping list
- salt and pepper shopping list
How to make it
- Add all of the ingredients and let sit for at least 30 minutes.
- Season with salt and pepper and serve!
- ***If you'd like to serve this in an avocado, peel and halve your avocado (remove the seed) and lightly sprinkle the inside with some lemon or lime juice to keep it from browning. Then sprinkle just a bit of salt directly on to the fruit. Spoon your salad into the cavity of the avocado and serve.
