Coconut Cream Pie Recipe

Ingredients

2/3 cp sugar

1/4 cp cornstarch

3 cp milk

4 egg yolks, slightly beaten

2 tbls. softened butter

2 tsp. vanilla

1 cp sweetened flaked coconut

1 cp. cool whip

Directions

Mix sugar and cornstarch in a sauce pan over med heat.

Gradually stir in milk.

Stir constantly until it thickens and boils.

Boil and stir 1 minute.

Stir atleast half of hot mixture slowly into yolks then add the mix back into the pan.

Boil and stir constantly 1 minute.

Remove from heat and stir in butter, vanilla and 3/4 cp coconut.

Pour into prepared pie shell.

Wrap with plastic wrap and refrigerate over night.

Before serving garnish with cool whip and toasted coconut.
