Coconut Cream Pie

- 2/3 cp sugar shopping list
- 1/4 cp cornstarch shopping list
- 3 cp milk shopping list
- 4 egg yolks, slightly beaten shopping list
- 2 tbls. softened butter shopping list
- 2 tsp. vanilla shopping list
- 1 cp sweetened flaked coconut shopping list
- 1 cp. Cool Whip shopping list
How to make it
- Mix sugar and cornstarch in a sauce pan over med heat.
- Gradually stir in milk.
- Stir constantly until it thickens and boils.
- Boil and stir 1 minute.
- Stir atleast half of hot mixture slowly into yolks then add the mix back into the pan.
- Boil and stir constantly 1 minute.
- Remove from heat and stir in butter, vanilla and 3/4 cp coconut.
- Pour into prepared pie shell.
- Wrap with plastic wrap and refrigerate over night.
- Before serving garnish with cool whip and toasted coconut.
