Southwest Chicken Hash Recipe
We love hash around here! My favorite thing to do with leftover meats of any kind - goes back to my thrify upbringing, I guess. And its an easy, delicious dish!

Ingredients
  • 1 pound red potatoes, boiled until tender, cooled and diced
  • 11/2 red bell pepper, chopped
  • 2 T. fresh cilantro, chopped
  • 1 cup leftover cooked chicken, chopped well
  • 1/2 large onion, diced
  • 2 T. fresh lime juice
  • 2 jalapenos, seeded and minced - or leave the seeds if you want this HOT
  • 1 garlic clove, minced
  • canola oil

Directions
  1. Heat oil in a large skillet. Mix everything together well and dump into hot skillet. Cook without turning for 10 minutes or so until the mixture has a nice crust on the bottom, turn and brown the other side well. Continue to brown and turn until the mixture is cooked through and crispy brown. Serve with a green salad for an easy, economical dinner.
