Southwest Chicken Hash Recipe

Ingredients

1 pound red potatoes, boiled until tender, cooled and diced

11/2 red bell pepper, chopped

2 T. fresh cilantro, chopped

1 cup leftover cooked chicken, chopped well

1/2 large onion, diced

2 T. fresh lime juice

2 jalapenos, seeded and minced - or leave the seeds if you want this HOT

1 garlic clove, minced

canola oil

Directions

Heat oil in a large skillet. Mix everything together well and dump into hot skillet. Cook without turning for 10 minutes or so until the mixture has a nice crust on the bottom, turn and brown the other side well. Continue to brown and turn until the mixture is cooked through and crispy brown. Serve with a green salad for an easy, economical dinner.
