Italian Swiss Steak Recipe
My version of the classic swiss steak - must be from the ITALIAN border of Switzerland! Rich, beefy, hearty, tender beef. Serve with mashed potatoes and veggies - love the gravy on those mashed potatoes!

Ingredients
  • 6 pieces round steak, bottom round preferably
  • 4 cloves garlic, minced
  • 2 large onion, sliced
  • 2 large green peppers, sliced
  • 28 ounces tomatoes, canned, crushed
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons basil
  • 1 tablespoon oregano
  • freshly ground black pepper, to taste
  • 1 cup red wine
  • garlic salt, to taste

Directions
  1. Remove all fat from steaks, cut into serving pieces, season well with garlic salt and pepper, and brown in oil in a large electric skillet with tight fitting lid. Remove from pan. Add garlic, green peppers and onions and saute 5 minutes. Remove, put steaks back in and cover with sauteed veggies. Add tomatoes, wine and seasonings. Cover with lid, reduce heat to low and simmer for 3 hours or until fork tender.
  2. Check often to be sure there is enough liquid in pan and if not, add a little wine or water. Do not let dry out.
