Spicy Squash

- Serves 4
Goes great as a side or over pasta.
Ingredients
- 1 Med yellow squash shopping list
- 1 Med Zuchinni squash shopping list
- 1 clove Garlic shopping list
- 2 Cups Diced fresh tomatoes shopping list
- 2 fresh basil leaves shopping list
- 1 Sprig of cilantro shopping list
- 2 tblsp of Pastene Crushed hot peppers shopping list
- 1 Small Can of sliced ripe olives (drained) shopping list
- 1 small onion shopping list
- 1/2 green pepper shopping list
- olive oil shopping list
- Pinch of salt & Pepper shopping list
How to make it
- Cut Squash Length Ways. Then Slice Thin
- Dice Green Pepper & Onion
- Mince Garlic Clove
- Finely Chop Basil & Cilantro
- Heat Enough Oil to Coat Bottom of Skillet
- Add Onions & Peppers and Saute 'til Tender
- Add Minced Garlic and Saute 'til Tender
- Add Crushed Hot Peppers, Basil, Cilantro, Black Olives & Tomatoes
- Salt & Pepper to Taste
- Simmer 'til Squash is Tender and Some of the Juices Have Been Absorbed.
- Serve Over Pasta, Rice or As A Side
- Enjoy
