Cuban Guajillo Pork

- 1 and 1/2 pounds boneless, lean pork; cubed shopping list
- 4 or 5 dried guajillo chili peppers; soaked in 1 cup boiling water until soft shopping list
- 1 cup fresh cilantro; chopped shopping list
- pork stock (you'll be making this when you poach the pork) shopping list
- 1 large onion shopping list
- 2 plum tomatoes shopping list
- salt & pepper to taste shopping list
- 1 clove garlic shopping list
How to make it
- 1) In a large pot place the pork cubes along with 5 cups hot water. Bring to a boil, then simmer for 30 minutes.
- 2) Split the softened guajillo peppers & remove seeds.
- 3) In a skillet rubbed with a little oil, put the onion (cut in half) & the 2 tomatoes (leave whole). Roast in skillet, over medium flame, until vegetables are slightly charred-looking on all sides.
- 4) Place guajillo peppers, roasted onion (cubed), 1 clove garlic , 2/3 cup chopped cilantro & the roasted tomatoes in blender with enough of the pork stock (from poaching) to make blender 1/2 full. Blend well.
- 5) Drain remaining liquid off pork & reserve.
- 6) Put blender contents into pot with pork & bring to a boil. Put heat on low & simmer for 90 minutes, or until pork is very tender; adding more reserved pork stock if necessary. The sauce should be fairly thick; like stew.
- 7) Put in serving bowl & garnish with remaining cilantro.
