Tex-mex Chicken With Chili Onion Rings

- 11/2lbs skinless,boneless chicken breast shopping list
- 1/4c garlic-lime marinade shopping list
- 1/4tsp ancho chili powder shopping list
- 1/2tsp salt shopping list
- 1/4tsp fresh ground pepper shopping list
- 1(11oz)can mexicorn,rinsed,drained shopping list
- 1/4c fire roasted salsa verde shopping list
- 1/4 c diced red onion shopping list
- 2Tbs fresh,chopped cilantro shopping list
- 1Tbs fresh lime juice shopping list
- 1/2c french-fried onion rings shopping list
- 8 yellow and blue corn taco shells or reg. corn taco shells shopping list
- Garnnish" shreaded romaine lettuce shopping list
How to make it
- In a med. bowl,toss chicken with marinade,1/2tsp chili powder,salt and pepper
- In a med. bowl,mix mexicorn,salsa verde,onion,cilantro and lime juice,tossing to combine.
- Prepare an outdoor grill or heat stove-top grill pan over med. heat. Cook chicken 3-5 mins a side till cooked through. Remove from grill.
- Meanwhile in a skillet over med heat,toss onion rings with remaining 1/4 tsp chili powde; heat,stirring until warm,about 3 mins.
- Cut chicken into 1/2" pieces. Fill each taco shell with chicken,dividing evenly. Top each with 2 Tbs of the corn mixture and 2Tbs. of the onion ring mixture. Garnish with lettuce.
