GROWN-UP CRANBERRY JELLO

- Jello: shopping list
- three 3 ounce packages cranberry flavored jello (see note) shopping list
- 1-1/2 cups boiling water (not just hot) shopping list
- one 16 ounce can whole berry cranberry sauce shopping list
- one 20 ounce can crushed pineapple (DO NOT DRAIN) shopping list
- 1 cup port wine shopping list
- Topping: shopping list
- one 8 ounce package cream cheese, softened shopping list
- one 8 ounce container sour cream, at room temperature shopping list
- a few drops of milk, if needed shopping list
How to make it
- In a large bowl, mix together jello and boiling water until jello completely dissolves. Stir in cranberry sauce, pineapple and its juice, and port wine and mix to blend well. Pour into a 13X9 clear glass serving dish or serving dish of equal volume. Refrigerate until set, about 4-6 hours.
- In a small mixing bowl, beat together cream cheese and sour cream, adding a few drops of milk, if necessary, until mixture is smooth and of spreading consistency. Spread evenly over top of set jello. Refrigerate until ready to serve.
- Note: Cranberry flavored jello is usually only available during the Thanksgiving and Christmas holidays. If you cannot find it in your area, raspberry flavored jello works equally well. If you use a different size/shape serving dish (like a cut crystal bowl for a prettier presentation), you may need to adjust the topping amounts. You do not need to buy top of the line port for this recipe. I buy whatever is the cheapest on sale at the grocery store and it always works well.
