I like chewy cookies. I found out that a low cooking temperature and a nut butter help achieve the perfect chew! Cashew butter results in a milder flavor than peanut, so other flavors (like chocolate or dried cherry, etc) can shine through!

SOunds great! We use a lot of sunflower seed butter so I might try that instead.
